What is the best bang for the buck? I want something that is sensitive enough to see my bait below the boat when i am drop shotting. I saw those guys on bassmasters doing this. I think it may up my learning ability of this new found tech. of drop shotting.

ive heard of people doing this with low quality electronics, but with that said it would be MUCH easier with a nice unit.  i would say a lowrance 552 (or whatever model it is now) this model has good pixel count, color, and GPS.  might be able to find one for around $600. 

as far as seeing your bait on the screen, it takes a little tweaking to really dial it in.  Edwin Evers does some pretty neat stuff with his electronics.
