I currently use a Minn Kota TM with the Weed Wedge prop with the curved tips on the blades.  This works very well getting me through the thick grass, however I did not always have this set-up and still had to deal with the grass.  Learned this from a guy in our bass club.  Try lifting the TM just enough to slip a full 12 oz bottle of water in between the TM and its mount.  Easily set the TM back down trapping that 12oz bottle.  The TM shaft will now point slightly forward of the boat and will blow grass down versus straight back.  This has helped me in the past in keeping a lot of the hydrilla from getting caught on the shaft.  Give it a try - it may help.

Warning - Swede does not owe you a  ~beer~ if this does not fully correct your grass problems, but it costs you nothing but one of those bottles of water in your cooler to try.

I use Motorguides and have used a 1 foot piece of 2X4 laid in the bottom of the Gator mount for years to get the motor up and also at an angle.  You cannot run the motor on high as it will jump out of the water, but you can find the exact point where it works the best.  Neat trick I picked up years ago watching guys in Florida working thru thick weeks.

GotstaFish,

You cannot lock down the motor and if you run it on high it will jump out of the water on you.  However, with just a little practice you can find just the right speed for your setup.  I have used this trick with everything from the old 45 lb Brutes to my current 82 lb Tour with a Spring Gator and nearly 99% of the time it lets you runs the motor on a lower setting quietly through the thickest of weeds including milfoil and hydrilla.
