We Cook For A Livin'

I own a small restaurant here in central MO, and no, this isn't a commercial. But we do cook, literally, for a livin'. We do what folks call "comfort food". I was NOT impressed when I first heard it called that, but I got over it when I realized how true it really was.

Our Catfish and Sunday afternoon Fried Chicken is almost famous around here. And I take pride in our food, my crew, and my wife and daughter who slug it out in the kitchen. It's a challenge. And with today's economy even more so, for all of us. Oh yeah, and folks go CRAZY over my wife's homemade baked goods. Sweet, literally.

Myself, well I'm the head janitorial technician. And the dish washer. Yep, old-school washin' the dishes, silverware and all the kitchen stuff (and it just keeps coming some days). Not a proud job for a 59 year old bass fisherman, but literally nobody else can (or will) do it. I've had teenage girls come apart at the seams when washing dishes. Go out of their minds. It's a sad world.

Anyway, we're in our eighth year doing this, in the middle of almost nowhere. We succeed because we care about the happiness of our customers, the quality of our "comfort" food, and the cleanliness of the whole shebang.

One more side note- neither my wife nor I had one single days experience in a restaurant before we opened this place up. I think it helped. Peace.

Nothing better than comfort food, those dishes look great Dale. Only problem I see, I just finished B'fast and those pics made me hungry.

That all looks great (except that liver crap lol).  How are you cooking up your catfish?

Congrats to you and your wife on your business.  Tks for sharing the story with us and those pictures.  All those plates looked very tasty and those pies well...delicious  :food

I'm fat enough already and looking at all that delicious food and sweets is just making me more hungry.

Seriously though, congrats on the success of the restaurant. It's easy to see why people would want to eat there!

Thanks all. It's a labor of love- I can't make any money doing it. Sad.

First, there ain't no liver in that pic (Salisbury Steak with
'shrooms and onions). We do liver sometimes, but I don't eat guts. Myself, I eat the WRAPPERS that hold the guts in.

The Catfish is my secret. A blend of four cornmeals and deep fried to SLIGHTLY (like 30 seconds) over-cooked. But the preparation before the fryer is the real secret.

I like catfish but still eat fried rough fish. Nothing better than fried carp or buffalo sandwiches with raw onions, a pickle and homemade bread. I showed the wife your desert tray. She said, 'one of each, please", so we'll be visiting next trip to the lake.

Ohhh, Salisbury steak is good eating, so I'm on board with that lol...

I can still remember the house stinking for days when my grandmother would fry liver and onions.  Still can't stand the smell of it...

I like the SMELL, just not the TASTE. What kind of Mountainman does that make me? Guess I'm no Liver-Eatin' Johnson.

that looks great!!  if i do my cross country kayak fishihg trip, i'll need your restaruant address!!


and i didnt think that was liver at all.  and it is poor form to speak badly of any dish.  if you dont like it, just dont eat it.  simple really.
