Tried I new to me recipe for chicken on the rotisserie on the old gas grill, rinse said chicken inside and out then dried it, made up a rub of 1/2 cup of brown sugar, 2 tablespoons of black pepper, 1 tablespoon and 1/4 cup of paprika, spread it inside the bird then over the outside of the bird. Place the bird on the rod, preheat the grill, I have a 5 burner so I light the 2 outside, wait for the heat to rise to about 400, and put the bird on and turn it on, the bird we did was about 9 or 10 pounds so it took a good 2 hours.
I made up a smoke packet by putting a hand full of chips in warm water for and hour or so, mesquite, this time, place the chips in a square of aluminum foil and place on a burner, poke holes in the top of the foil and when smoke starts coming out place the bird on the grill, close the lid and wait, I checked the bird after 45 minutes but it needed to go longer.
Let the bird rest for 15-30 minutes and enjoy.

Old Fishermen never die, their rods just go limp.
