Mercury VesselView Fault Codes

Hey fellow anglers! I recently ran into an issue and was hoping to help some help/advise. I have an 05 Mercury optimax 175 outboard on a 05 Champ 187. My issues is:  My boat will no longer get on pad. I was at the lake the other day and my boat would only do 47mph and 5100 rpm. It hops right up on plane and the engine purrs like a kitten at idle and feels fine. Once I get going, it just plows through the water and can't get up on pad. It's like no matter how much trim- the spray from the side of the boat was about even with the front rod box. Furthermore, after about 5-10 mins of running, out of nowhere, it will loose power. If I shut off the outboard let it sit for about 5 seconds it fires right back up and I can run for another 5 to 10 mins again before it loose power.

I checked my prop for damage and jack plate for any movement, but didn't notice anything out of the ordinary. My buddy has a Mercury VesselView and when hooking it up, I got the following codes:

Engine Sensor; 1012-25 Engine or drive trim position-The input circuit for the sensor is below the valid limit.

Engine Sensor; 541-24 Sea water temperature- The input circuit for the sensor is above the valid limit.

Engine Sensor;  701-24- Level sensor tank A- The input circuit for the sensor is above the valid limit.

Engine Sensor; 711-24-Oil level sensor- The input circuit for the sensor is above the valid limit.

Engine Sensor;  451-25-Pitot pressure- The input circuit for the sensor is below the valid limit.

I was doing a bit of reading online and folks indicate these codes may be "ghost" code as not all outboards have these sensors.

My question is, has anyone experienced anything like this before and what was done to remedy the issue, or does anyone have recommendations on what I could check out before taking the boat for service?

Side note: after this issue, I put new ngk plugs and did a compression test (130 on all 6). I am also planning on replacing the water pump and thermostats just for a piece of mind.i checked the thermostats and they appear to be working, but will be changing them as they do appear to have seen better days.

I have a friend with an Opti 150 about the same age, for some reason it ate impellers at an impressive rate sometimes 3 in one season, for the rest I have no clue, never owned an outboard controlled by computer. I'm not fond of cars controlled by them.
