Leg O Lamb

We had a hankering for leg of lamb so I picked up a 6 lb boneless, some oil cured olives, capers, my wife got some rosemary, thyme, garlic and mint from the garden. I finished the lamb by butterflying it.
1. half cup oil cured olives
2. half small jar capers rinsed
3. 3 stalks of rosemary, 3 of thyme, 3 of mint 8 or so cloves of garlic,
4. quarter cup of olive oil
Pop everything but the lamb into a food processor and run it until you have a fine paste, spread the paste on the inside of the lamb, run a rotisserie skewer through it, warm up the grill and get that puppy to spinning on medium heat, takes about 90 minutes, any extra paste will go good on bread. We had it with fresh corn on the cob, steamed cauliflower, and tomato mozzarella cheese salad. Buurrrp
Goes well with Ouzo for all you what need adult beverages with dinner.

Sounds delicious, lamb is by far my favourite meat   ~beer~
