Clam chowder

Every Christmas clam chowder is on the menu for the Feast of the Seven Fishes so I figured it was time to post it.

4 slices of bacon diced
2 ribs of celery diced
1 large sweet onion diced
1 garlic clove smashed and diced
3 small potatoes cut into 1/2 inch pieces
put in soup pot and saute til translucent
1 cup water
5 small jars of clam juice
1/2 tsp dried thyme
1/4 tsp white pepper
2 cups 1/2 & 1/2
5 cans minced clams
1/2 stick butter
stir in potato flakes until desired thickness is reached and then simmer of low to med heat for 1 hour to be sure the potato flakes have absorbed all the liquid they can to remove lumps.

My only concern is the 5 small jars of clam juice, is this a New England thing?

I will make this recipe. Rodney, no disrespect but I'm putting some whole Littlenecks in the pot just because I like them.

You should be able to find them in a grocery store, if not have a fish supplier get you a large can.

Mom always said you were a bit different. lo lo I like little necks also but when the boss says you're using these instead your using these instead.
