Made chili yesterday and we had it for supper.  Today it was again verified that the one thing better than chili is day old chili..  Had it for lunch today and it was even better than last night.

Know what's better than day old chili? Day old chili wit a beer!

I find a lot of food the second day has better flavor. I'm no chef but I would presume it was just like marinade allowing the seasoning longer to work its way in.

One thing better than chili is day old chili with more Tabasco.  ~bb

Agreed on all fronts. I just made some on Friday. More basic than I prefer, but that's what the wife likes. I prefer several different proteins (like chorizo, bacon, chicken AND sausage) to join the beef, but I understand that's a lot going on.

Made some a few weeks back using beef short ribs, some ancho chilis, and a little chocolate and it was darn good too

I had to tone down the heat in mine once I got into the position where I wasn't the only one eating it.
I used to use several different peppers, guinness stout, a little baker's chocolate, and a few other ingredients that I'll keep to myself. NEVER used hot sauce.
It had that slow creeping heat that'd sneak up on ya. Every bite down to the last was mild and the flavors came through wonderfully. But your face would start sweating after just a few, and if your mouth isn't rinsed regularly with a beverage it'd start to blister.

I never warned anyone. Always let it surprise 'em. Now I use only bell peppers for that certain pepper flavor and just add Chulula to my own bowl for some heat.

Anyone here put corn in theirs? I don't myself, but know lots of folks who do and it does add yet another interesting flavor. Not a good flavor in my opinion, but interesting.

Mmm... I may need to make some soon.

depends.  I do for my green pork chili.  that corn is perfect.  little crunch, little sweet and the flavor fits well with chili powders, tomatillos and cilantro.

as for what's better than chili?   ;D
chicken noodle soup with home made noodles over a scoop or two of garlic-asiago mashed potatoes.

it's what's for thanksgiving here in a few days.

Good chili on a cold winter day with snow falling is the top of the list for that type of day for sure.  It's great either for lunch or dinner or both and reheated the next day as well.  I wouldn't say it's my top favorite thing to eat, but for cold winter days, and reheated it's the top.
Enjoying retirement in the great Pacific Northwest.  I've turned into a fair weather angler.  Why do it today when I can do it tomorrow?
