Gar Balls

Gar Balls

Ingredients
gar meat
crushed crackers
eggs
vegetable oil
cajun spices
black peppe
red pepper
celery
onion
sweet bell pepper

Preparation

Run the gar meat through a meat grinder 3 times to fine chop any bones.
Chop celery, onion and bell pepper finely.
Add crackers, black and red pepper and cajun spices into a mixing bowl and mix thoroughly.
Add one tablespoon of vegetable oil and 2 eggs to the bowl and mix thorougly. Put into refrigerator for 15 minutes.
Upon removal from the refrigerator, add celery, onion, bell pepper and gar meat to the bowl and mix thoroughly. Form the mixture into golf ball size pieces. Put into refrigerator for 15 minutes.
Deep fry the gar balls until medium gold color and serve. OR add  3/4 inch of vegetable oil to a skillet. Heat on med/high until hot. Place gar balls into skillet and fry until golden brown on one side. Turn the balls over and fry until the entire ball is the same color. In both cases, put the gar balls on absorbant paper to soak up grease. Serve while hot.

Gar balls taste very good made with cajun spices. The smell is incredible. Somewhere between Gator breath and Skunk Ape.  Just kidding!
