Getting hot into grilling seafood

Well as many of you know I have been suffering through some medical issues for over a year and in fact my company decided to retire me out on long term disability.  I am going back to college to study computers-Help Desk and Lan Support Networking at the end of the month. This means I have not been allowed to fish for over a year.
We also recently replaced our old rusty grill with a nice new 3 burner gas grill. 

Since I have too much time on my hands I decided to play around and grill some seafood,  which I had never done. I worked for Roy Rogers for like 6 years back in high school and college and so I know my way around a burger patty, steak. and bbq chicken, but seafood is new to me.

So I surprised when Linda came home from work.   I had already gone to our local supermarket that carries great fresh seafood and got my supplies. I have purchased and pan fried tilapia and orange roughy before, but this was going to be a grilling experiment.
I purchased a pound of 28-30 count fresh shrimp that were deveined and the shell was still on.  I also picked up 1 pound of tilapia

Here is where my MD comes out. Of course I removed the shells and tails, oiled them up a bit and tossed them in with a 1/16 of a cup of J O Crab Seasoning. J.O. is like McCormick's Old Bay, but a bit more salty and the black pepper is a tad more present, so it must be used more sparingly.

Those went on the skewers . Next I made up skewers with cut up green bell peppers and plenty of cherry tomatoes and pineapple pieces.  Lastly comes the fish.  I own one of the clam shell baskets to grill fish in so turning is easy. If you do not own one try it, they are so easy to work with.

For the fish I added a little oil and coated them on each side with some McCormick's Lemon Pepper Seasoning.  WOW was all that good!  Guaranteed no left overs!!  Watch out though, things need to be put on a HOT grill and then turned and watched. The veggies and shrimp took maybe 4 or 5 minutes total.  The fish took about 4 minutes a side. It needs to come off when the meat starts to flake. I start it on high heat, turn the fish after say 3 to 4 minutes and then lower the heat some to finish it out. I think I turned the fish maybe 3 or 4 times total and the grill stayed around 400 degrees with the lid closed. Doing it this way the fish was moist, flaky and had those great markings from the metal bars on the fish basket.
Try this simple dinner I think you will be well fed. I am sure your taste buds will be satisfied.

Sounds very tasty!! I've marinated shrimp in raspberry dressing and used them in a salad, came out great!
