Smoked prime rib

My daughter took me to the base the other day and they had a decent price on prime rib roast.
Decided to grab one and also pic up a few racks of ribs.
Told the kids the prime rib was getting cooked up tonight with some baked potatoes and grilled asparagus.
Damned right they showed up!

Sorry, didn't explain how I cooked it.

Cut the ribs mostly off the roast. Made a rub consisting of olive oil, fresh garlic, and steak rub. Mixed this into a paste and rubbed it all over the roast. Tied the ribs back up to the roast with butchers twine. Let this sit at room temperature for a couple of hours.
Threw this onto my Pit Barrel cooker for about 2 1/4 hours until I had it at about 120 degrees in the center. Took it off the smoker and let it rest for about 20 minutes. Came out to a perfect medium rare in the center. It actually cooked a whole lot quicker than I thought it would.

This is super easy on the Pit Barrel cooker and comes out delicious. Pair this up with some Bullet Bourbon on ice and enjoy your evening!

That really does look awesome. I smoked some great pork ribs with peach wood and basted with Blue Hog sauce. I think I lost this competition.

Momma decided she was going to bake some banana bread tonight also. Damn I'm a lucky guy!

I don't know Wiz. I like me some good ribs about as much as I like prime rib! Those sound good too.
