Garlic Pesto Grilled Chicken

Made a killer marinate tonight.

2 Large boneless chicken breasts
Olive Oil
1 tablespoon of Pesto
3 tablespoons of dried chopped onions
2 tablespoons of fresh minced garlic
1/2 tablespoon of Mrs. Dash no salt garlic & herb seasoning
Pepper grinder

Put Pesto, onions, garlic and seasoning in a bowl. Pour in Olive Oil and mix together. Use as much Olive Oil as you feel you need until the consistency is thick but will flow some.



Thaw chicken and score about 1/2" deep across the grain and one long score with the grain. Imagine the laces of a football.

Paste marinate all over and in the cuts. Grind a generous amount of fresh pepper on chicken. Let sit in fridge overnight.



No sugar No salt 4g carbs. I could eat the marinate by itself lol

I decided to do fresh mushrooms, onions, tomatoes and asparagus sautéed up in some Olive Oil, fresh garlic and Mrs. Dash.

I would love just the asparagus alone!!
I like to throw asparagus in a ziploc with Italian dressing and throw it on the grill a few hours later. (the asparagus, not the ziploc!!)

That chicken sounds real good there Rock.

Thanks. I've always loved to cook, but it's never been what you would call healthy lo

That was the way I used to do it. Then cover it with kosher salt. That or wrap it in bacon!
