Linguine With Hot Fennel Sausage Black Olives and Vegetables Alla Carabonarra.

Ok so I'm bored! The holiday season is over and I should be on the ice but it is not yet safe so here I sit broken hearted, paid a dime and only... well, you know!

While doing some home renovations yesterday this old classic came to mind. It's pretty simple and you have not likely ever tried it. It's real goombah mafia food!



Begin with fresh sausage. I chose a hot Italian sausage with fennel seeds in it. Peel the skin off and mash the meat.



Fry it up in a skillet until it is cooked. Completely cooked. Deglaze the pan with red wine



And when the wine has completely evaporated remove from heat and set aside in a bowl.

Before I go any further, let's talk salt. There is no salt used in this recipe since sausage, olives and Parmesan cheese are involved. To avoid a salty mess, taste the finished dish before serving and adjust to your taste.

Put your linguine on and cook it until al dente and set aside. Add some olive oil to the water and your pasta will not stick together while it waits to be combined with the remainder of the ingredients.

Next, yellow pepper, cherry tomato, mushroom, garlic, onion and black olive all chopped together and into the pan.



You want to move quickly at this stage since you don't want your vegetables over cooked. You are looking for a bit of a bite on the vegetables when this dish is served. 

Add cooked sausage to the vegetables and heat through.




Add the pasta and mix all ingredients until well combined and hot. Now turn this mixture into a serving bowl and begin to prepare the sauce. 



Two raw eggs and Parmesan cheese. Mix these two together



Whisk until smooth, pour over your pasta mixture and mix until the egg and Parmesan form a creamy sauce. The heat of the dish will cook the egg and melt the cheese simultaneously creating a very rich element to your pasta.

Don't forget the vino and a nice port for dessert!!!

Hey man I would be glad to make a nice spaghetti with a meat and tomato sauce for you all!!  With salad and sardine bruschetta. Getting ingredients is the challenge.
