Using Pork Rinds As Bait... Wait For It!

My dad was born poor in 1922 and he taught me how to repurpose things. Here goes...

How to cook up a nice pea and cauliflower soup!



Prepare any vegetables you have in the fridge for a soup. Here I used onion, carrot, celery, cauliflower, garlic and parsley. Italian parsley because there is no other kind of parsley.  Capeesh?



You will need smoked pig shin with skin on. Lots of meat on here and fatty with skin on. Cut that up to expose the bones.



Olive oil and butter in the pot and then add both vegetables and pork like so


Make it all happy happy on a medium high heat to get some flavour going.

The next step is important.



Four or five cracks of pepper but only a bit of salt. The pork hock is salty from the brine is salty and what is coming next has been seasoned.



This is the secret! Home made chicken broth made the day before and fully seasoned which is why I say go little or no salt. You can always finish with it later.

One day I will show you all chicken soup. If anyone wants that old recipe just pm me. That soup is powerful.



After a few hours the bones are looking good and clean from the bone. Cook it nice and slow not with a lot of heat until it drops away.



Rosemary and thyme at the final stage so that they give off a nice fragrance when the soup is done.



Remove all the pork on the bone skin and all and set aside.


You have to drink a few beers while you make this!



Once the pork has been removed gently mash down the soup ingredients so that when you eat it there is still some texture. This will help with the flavours that you have put into the mix.



Cut the pork up nice and small into bite sized pieces. There's lean bits and fatty bits. Put em all in!!



When it's all chopped up and put back in just salt to taste and enjoy some great pea soup.

Here is the tip from the old man.



Those are the pork rinds that got cut
off while trimming the leg. You take em and put em in a bag with salt and garlic powder. Fridge them for a day and then freeze em. We use those rinds ice fishing as trailers and they work real good this way.

Makes me want to go to a prepare a soup with the cold weather we have here today! 

You might as well post the chicken noodle soup recipe.  Too many will be licking their lips already!

However, at my house those pork rind trimmings ain't going to be used for no fish baits!  :shocking:

They may go into another soup, stew, beans, field peas or something else on the stove, but not into a fishes mouth!  lo

They aint going to make it past dinner, you don't give fish good food and most times it don't last past the end of dinner!!
