Smoked Bacon

I smoke a lot of meats. Pork, chicken and wild game mostly. But never bacon until today. I draped about 2 lbs. of slab bacon in slices over a spit in my smoker. An hour of applewood smoke and it was perfectly cooked. A nice deep brown that had an amazing taste. Nothing like the store bought variety. A full applewood taste thoughout every slice. Nothing this easy to cook should taste this good.

I'm just putting the same damn thing in the smoker. Go figure. Keep it wrapped up in the fridge for a few days and it gets even better. If it lasts that long. Lol.

I was gonna try smoking bacon once...................but I couldn't fit it in the cigarette.  lo

Sorry, I couldn't resist. I actually like smoked meats of just about any kind  and I wholeheartedly agree. Store bought just doesn't compare to homemade.

I get it from the butcher. We dont have wild hog up here. If you all want to send some up ... Just sayin!!!

I do a lot of bacon on the smoker...it's so far superior to anything you get at the store.  I can't tell you how many people have tried it and said "this is the best bacon I've ever had in my life...seriously...I've never had anything this good."

I cure mine for about a week prior to smoking.  Might have to do some next weekend.  Tonight I'm making Bratwurst and breakfast sausage.  Tomorrow I have a butt going on the smoker for 6 hours.

What time should I come over ?? Lol. Last week I did a five day dry cure of lamb belly and then just three hours in the smoker with pear wood. First time for that and it was out of this world. If the wind is blowin right Tomorrow I might just get a whiff of that porker!!!

Polaris you gotta have some of them runnin around down your way. We could make a deal for some moose or somethin cause that would be damn fine bacon off one of them wild ones.

They run rampant in places. Farmers will sometimes let you come hunt their land to get rid of them. They are open season all year. I've only been intentionally hunting for them twice.

But they make great sausage. Which goes great in nacho dip.

Moose are not as plentiful here but we get a few every fall. They taste great!!!

I'll take moose over wild hog anyday. Moose is very tasty, especially the tongue and meat beween the shoulders. Hog can have a good or vile taste depending on what they have been eating. And that is near anything including other hogs. Used to hunt hogs with a bow when I was young. That can turn bad real quick. Moose just stand there and say "shoot me".
Family came over for breakfast this morning. The bacon didn't last long.

We make a lot of stews sausage burgers and roasts with moose. Its cold when we get em so we hang em up for four or five days. That helps make the meat more tender. When you come upon one its pretty much like hittin the broad side of a barn.

I like to cook in my retirement and have taken classes in gourmet cooking. I also ate a lot of critters growing up because my family hunted, snared, trapped and fished for food. I made a dish of "rabbitt marsala" for a Italian cooking class. The chef loved it until I told him it was rabbitt. I guess rabbitts are scarce in Italy.

That rabbit sounds might y fine. Used to hunt them with my dad and he made the warmest mitts for us with them.

ha!  My plans actually changed a bit, so nobody's butt went on the smoker.  I threw some bratwurst on instead and will use the remaining pork butt for either Boudin or Rillettes.

Boiled bacon is about the worst way to cook it,,,, other than that no wrong way to have bacon  lo  Made up a big bunch of asparagus wrapped in bacon and smoked it for the 1st time ever yesterday,,,, the bacon was great but I think cooking it in an oven or direct heat on a grill works better,,,, lets the bacon nummyness soak into the asparagus better and is crisper.

Awww.......poor Mooses.  Don't shoot them.  When I was a kid, the local Moose Chapter sponsored a baseball team I was on and they gave us all warm-up jackets with the Moose Logo.  All the other teams were jealous, so don't shoot the Moose !  lo

who would have ever thought to boil bacon?  lo  Fried, grilled or smoked, or oven cooked only.

Its hard to find REAL smoked bacon anymore. They may run it through some kind of smoke chamber for a few seconds the smoke flavoring added. Growing up, we had a smokehouse. We hung the hams and slabs of bacon and smoked them for as much as a couple of weeks. Hardly ever get any kind of smoked meats as good as that anymore.
