Bedouin Spices and Additions

Now that you have a simple recipe for N. African food, let's make it truly Bedouin. Spices, fruit, nuts and other natural ingredients make the dish authentic.

Most common Spices
1) cumin
2) paprika
3) cinnamon
4) saffron

Less common Spices
1) coriander
2) parsley
3) peppermint
4) chili paste (hot)

Common Additions
1) dates
2) raisins
3) olives
4) fruits
5) legumes
6) almonds and other nuts
7) vegetables
8) roots and tuberous plants

Finally, the main ingredient of most dishes: Rice! CousCous is next and wheat mess(Mafoon) is last.
Remember that Bedouin food is simple but with a mixture of tastes. Spices are used to enhance natural flavors.
