Potato & Bacon/Ham soup

I thought I posted this last year but must have been to busy eating it to write it down..... I don't know why I only make it twice a year; it's that good  8)

Not sure what to do with your left over ham?  Do this,,,, if you like it and don't have ham use bacon; that's what the base recipe calls for anyway  lo

Peel 10/12 medium to large potato's base this on the size of pan you have.

Been asking D for red tators for the last two years but she keeps bringing me regular ones  ::)  I want the baby reds so I can just was them and cut into 3 or 4 pieces but regular ones work just fine,,,, you just have to peel them and dice them up into bite size pieces.  Note take one or two and dice finely so they cook down and help thicken the soup base.

Once cubed/diced tators are in the pot cover with chicken broth, calls for 5 or 6 cups but I need to use 8 or 9 cups; bring to boil.  Reduce heat and cook until tators are soft.

While they are cooking in another pan add 1lbs bacon "more is better" I chop mine up before cooking and chop up 1 or 2 red or yellow sweet onions and brown them together until the bacon is pretty brown. While browning season with black pepper and garlic, fresh garlic is best use 2 minced cloves add pepper and garlic powder as needed "I use a lot" 1/2 table spoon each and test and add more of one/other/both.

Now if you have ham to use do the same above if you want to add it to the bacon go right ahead, I did one package bacon and all the left over ham just under 2.5lbs if you don't want to use bacon then added 3 tbs of olive oil to help brown the onions.  Once the onions start to get clear and the bacon/ham has a good brown to it dump everything in with the boiling potato's mix it all up and reduce heat to a strong simmer until they are nice and soft about 15 more min.

Once soft you need to make the cream base.
You need 2 cups cream, 1/2 cup flour, 6tbs butter and your favorite chicken seasoning,, avoid anything sweet and don't be afraid to add salt because the potatos will suck most everything up and it's easy for the soup to be bland if you don't season it right.

Melt butter in a pan, as it melts I added garlic powder 2tps, mrs dash 1.5 tbs, 2 tsp black pepper, 1 tbs tuskin chicken and when it's all melted and missed in whisk in the flour, cook in MH for 2 min until nice and thick and a creamy brown.  You need to whisk it none stop so it doesn't burn and then add the cream and whisk together until it thickens up.  You can see the change, the thicker this cream base the thicker your soup will be.  ;)

Now that the tator soup base is ready reduce the heat to a slow boil, add in the cream base and stir together until well blended and reduce heat to warm. Some of the potatos will mix in to help thicken the soup but if it's not enough add potato flakes 1 tbs at a time until it's as thick as you want it.

Serve in a bowl and top with shredded cheese and chives,,,, that's how D and Aarian like it, I like it straight out of the pot into the bowl and add a few good dashes of pepper or maybe just a little more pepper and some slap your moma to spice it up,,,,, depends on if I'm stuffed up of not  lo

This is so mush easier then it sounds and is very easy to customize to fit how you want it and is a great way to change up your left over Thanksgiving and or Christmas ham...... Makes a cold winter day much better  :food

Great Recipe Ron, sounds like the one I use for Turnip soup, except I add a tablespoon of baking soda to cut the acidity down.

Ron, with all of these great recipes you post on here don't be surprised if I show up at your house wanting to rent a room for a while.  Plus, you live that close to a good lake.  Hell, Im on my way.

I still only make this tie a year,,,, once after thanks giving and once after Christmas,,,, I think that means I need to cook a ham more then twice a year LOL


D keeps wanting me to make some potato soup from Olive Garden Tip-a-dis-scotty,,, said I was close with this but told her no  lo I like ham in my tator soup.  The hardest part with this is getting it thick but not to thick,,,, the more ham you add the better IMHO and I go over board on both ham and tators.

Sounds delicious Ron.
I'm close to the same way with ham and beans. I pretty much only make it after a holiday with a left over ham bone. I always leave plenty of meat on the bone just for this reason.

So I'm out driving around today taking care of some chores and I begin to wonder what I'm going to do for supper. It's a bit cold, a few snow flakes falling every now and then, my stomach is growling and I start thinking it's a perfect night for a fire in the wood stove and some soup.
Pulled up this recipe to make sure I had everything. Stopped by the store for some chicken broth and bacon.
Now I'm sitting at home enjoying a cold beer, waiting for momma to come home and have some of this potato soup. Of course I tasted it a few times and let me tell you, it is delicious!
