Sometimes I feel like making a fresh veggie soup or a pasta with veggies. If you go to the store for fresh veggies in the produce section, you have to buy a whole vegetable or bundle of vegetables. The price runs up quickly and you find you have a lot of leftover veggies. Sure, you can cook them up by themselves but that wasn't the reason you bought them. PLUS, you still have to cut or chop them up which could take some time. The remedy- buy the veggies from the salad bar. You can buy just the amount you need, put it all in one carton AND it is already cut up and ready to use. You will find that buying just the amount you need is cheaper than buying in the produce section.

Won't happen in my house, my wife is second generation Sicilian, left over veggies go in frittatas, on pizza, roasted and served, sandwiches, snacks etc. Baaa, baaa ,baaa. lo :surrender:
Before I met her 47 years ago it was meat and potatoes, or bacon sandwiches on white bread with Hellmans mayo.
