I just got me an 05 206 with a 300 hpdi on an 8" bracket and am wondering if a holeshot plate would do anything for me?

Not sure. I asked the folks at Legend about one when I picked up my boat and they had found it wasn't worth the effort on my LE195. After taking it out for the first time I found out why, comes out of the hole like a jack rabbit! ;D

Hopefully one of our Champion owners will weigh in on this. ;)

Sure couldn't hurt!  I bough one for my rig (10" slidemaster) for the purpose of mounting a hummingbird side scan transducer off of.  My rigs in winter storage so I am not able to tell you if it did anything relating to hole shot improvement.   However: My boat has an excellent HS already so any improvement may not be noticeable.

You can place a inflatable ball (basket ball or other) into the JP air it up and water test for improvement. If it improves the hole shot: Buy the plate!

I think a different prop would be a better answer.
Mine is a 203, not the wider model like yours, but a 4 blade gave me a much better hole shot than the 3,
and with the right 4 blade, won't affect your top end much.
A 300?, wow. You must not fish tournaments. But you gotta get some serious speed out of that setup.
