more stuff that's just good food.  I'd recommend butter instead of olive oil.  nothing beats the taste of 'brown butter' with that nutty, rich note.

plus, this guy's attitude?  dig the humor.

when you do this, get your bread from the in-store bakery.  maybe un-sliced.  those half-inch slices are key.  or if you have a great harvest or grainbin or even a paneras close by...

and all the bread in the bread aisle has 'ESL' technology (that's extended shelf life) that keeps bread from firming.  makes tough to toast AND eats a little gummy when you use it.

stuff that I know from working in the industry for 30 years...   ~shhh
