Oyster Soup

While this is a recipe for oyster soup, you can make it oyster stew by adding boiled and cut up potatoes to it. This is my own recipe and much better than any I have eaten in a restaurant.

Oyster Soup

Ingredients
1 cup sliced and cut mushrooms
1 minced garlic clove
2 cups heavy cream
2 cups reduced fat milk
2 shakes red pepper
2 slices chopped onion
3 chopped celery stalks
4 chopped baby carrots
4 tablespoons butter
8-16 oz fresh oysters cut into halves or thirds
Reserve the oyster juice to be used in cooking

Cooking
Place 2 tablespoons of butter into a 4 quart sauce pot and melt. Put in onions, garlic and mushrooms and cook until soft. Add carrots and celery and cook 2 minutes. Periodically, use a wooden spoon to move vegetables around and keep from scorching. Add milk, cream, 2 tablespoons butter and half the oyster juice. Turn up heat until it simmers for 2 minutes. Lower the heat until it is barely bubbling and add the oysters and remaining oyster juice. Cook for 1-2 minutes. You don't want the oysters to over cook and become tough. Total time: 30 minutes. Serves 6-8 people.
