Tangeen Rabbit

I was seeing a lot of rabbits near the brambles at the back of my property. Wanting to protect my spring plants and desiring some tender rabbit, I set some snares on a couple of small game trails. A couple of hours later I had 2 fat bunnies. I was going to make some stew in the slow cooker but didn't have the right ingredients. So, I decided to cook them in my Tangeen. A Tangeen is a Bedouin style of slow cooking which tenderizes the ingredients. It consists of two pieces. A bottom area looking like a round cake pan and the upper part like a funnel.  The ingredients are put in the bottom and as they cook, moisture rises up the funnel. The moisture cools as it rises up the funnel, returns to water and drips back into the pan. I put cut up pear, raisins, cous cous and spices along with rabbit pieces into the Tangeen. Put the Tangeen over a fire or stove and cook it for about an hour. The meal is sweet, tender and filling.

It's been years since I've had Rabbit to eat. Sounds like this one will taste very good.
