Bar-B-Que Snoot Sandwich

I was driving through Venice, Illinois last night and stopped by my favorite Q shack. The owner is a lady named Ermadene. Only place near St. Looie that still sells pig snoot sandwiches. The snoot is mostly cartilage with a little meat and skin. She slices it in 3/4 thick slices and slow cooks the snoot in a pot of barbeque sauce till it is mouth watering tender. A couple of barbeque drenched snoot slices are put between country French bread with xtra sauce for dipping. Not a part of a hog that most people think of eating but it is better than very good. I've been eating snoot since I was a kid. You don't find it in the butcher's shops very often. Ermadene's place is about 2 miles from National City. It was once the biggest stock yard in the country. You can buy any part of a hog there. Ermadene also sells Smoked Sow Belly. That's  eatin' low on the hog even for country folk. Hope I made Y'all hungry.

I just had my wife's version of shepard's pie and strawberry/rhubarb crisp. Your's sounds great but I'm good. ;D :)    Buuuurrrrrp

Wiz that sounds real fine!!!! I love that snout in a soup and I don't know if you ever ate the cheeks and the ears but those are damned fine as well. There is a Guyanese recipe for the trotters as well that I can only eat once or twice a year so as to avoid well... a heart attack!! Souse they call it and it's made with cucumber onions and celery. That is a bit of heaven. You are doing some good eating there!!! Enjoy!!
