Crab Cakes de la Wizard

I'm making crab cakes today because the wife likes them.  Easy to make and your lady will love them.

Crab Cakes de la Wizard

Ingredients
1 lb. clean crab lump or claw meat
1 egg (beaten)
1 tsp. dry mustard
½ tsp. hot red pepper powder
¼ cup of diced celery
1/3 cup chopped green onion
2 tsp. Old Bay seasoning
1/3 cup Mayonnaise
½ cup Panko breadcrumbs
2 tsp. Worcestershire sauce
2 Tbsp. minced or dry parsley
3 Tbsp. butter
2 tsp. lemon juice (can leave out)
1/3 cup diced red pepper (can leave out)
¼ tsp. Tabasco sauce (can leave out)
1/3 cup diced yellow onion (can leave out)

Directions
Sautee the red pepper, celery and onion in the butter for 5 minutes or until tender

In a bowl, combine all the rest of the ingredients EXCEPT crabmeat
Combine sautéed vegetables with mixture
Using your fingers, gently blend the crab into the mixture
If too watery, add more breadcrumbs
Shape crab mixture into cakes
Chill in refrigerator for at least 1 hour. This is needed so the cakes don't fall apart

Cooking
Put 2 Tbsp of vegetable oil into skillet. Don't use a lot as you don't want the oil to go into the cakes
Sautee the cakes 3-5 minutes or until golden brown
Turn them over carefully. Use a spatula and your fingers so they don't fall apart
Sautee the other side until golden brown

Information
Recipe makes 6-8 cakes. 2 cakes per serving
