If I am going for one bait that I have tied on almost any time of the year I would have to say a War Eagle 3/8 oz spinnerbait with a white and chartreuse skirt with the big gold willow leaf and small nickel Colorado blade.  Another bait I have tied on almost the entire year is a Bomber Fat Free shad Bill Dance edition citrus shad that dives to 14' deep.

Black trick worm on 4/0 wide gap, no weight.  Always have one tied on. Day/night, hot/cold...doesn't matter.  Have used in 6 inches of water to 12ft. Ponds, lakes, rivers. Around grass, trees, and on structure.  Have used in NC, SC, FL, LA, and TX.
Using this rig forces you to fish slow and methodically.

light wire

Mine 3/8 oz. Black jig with zoom speed craw, blue. Swim it shallow, or fish it deep, trees, weeds,or rock.

OxbowBass

My all-time favorite, hands-down, is the Damiki Hydra rigged Neko style.  I use a 1 or a 1/0 Owner circle hook about 2/3s of the way up toward the top of the bait.  I would say this rig and presentation accounts for 60% of the fish I catch during the year.  When the bite is slow, this is particularly effective on neutral Bass.
Some people say doing the same thing over and over again, all the while expecting a different result is the definition of insanity.  I just call it fishing.

Mine would be Bite it bait's (Double X) in a junebug red, or a Zoom ol'monster in the same color.

I use all kinds of lures when I fish, but my go to bait is a 5 inch Senko. I use them in all types of water stained or clear. I normally fish them wacky rigged with no weight. I have 3 rods in the boat set up to fish this way. 2 have with 12 lb test line and one has 8 lb. I choose which rod based on the fall rate of the bait. The rods with 12 lb test I use a size 1 bait holder hook with a weed guard the other has a size 2 hook. The rod with 8 lb test has a size 1 hook. I have multiple colors of Senkos but for the lakes I fish in anything black or dark purple works awesome. I have caught the most fish on this two colors. I also discovered a trick for bedding bass this past season. The bass kept short striking a worm while on the bed. The kept biting the tails off. They wouldn't even look at the Senko until I rigged it Texas style. But they were still short striking it an not getting the hook. So I down sized from 5.0 worm hook to a 2.0 bait holder hook. I threaded the hook and line through the Senko to where the hook pretruded out about a 1/4 inch from the end. It took a little work to get through but it paid off. I caught 8 bedding bass after that with the largest being 5.3 lbs.

If I had to choose 1 bait as a favorite, I'd say a 1/4 oz finesse flipping jig. An example of this would be the Bitsy Flip. It has a heavy wire hook and thicker weed guard. Black/blue color with Zoom baby super chunk trailer. I usually add a rattle collar and rattle. I throw this bait in and around wood and rock cover as deep as 20 ft. I use my line size according to depth and cover. 12lb test is a good all around line size.

5" senko, custom poured watermelon with red/grn/blk flakes rigged from weightless to 1/4 oz. inline weighted red 4/0 EWG hooks only. I use with 7' plus spinning rods most of the time with 2500 size Steez reels with 12 - 14# sunline super sniper FC line. Fishing Ca. Delta tidal waters where there are a lot of very large fish and lots of weeds! Need some power and strong line to get them up and out. Have at least a dozen between 12 and 15# in last 5 yrs. and quite a number of others well over the 5# to 11# mark. Also I am not a good big bass fisherman but do fish for numbers. I rarely throw really large baits and virtually 95 % of fish over 5# caught with mentioned above, but I throw it 95 % of time too :)
