Getting closer to finishing the install. The transducer is set up and I was able to run the wiring. It was actually pretty easy as I had a fishing pole storage spot on the side that once I removed that made running the wires real easy. ;D
So I took everyones advice and bought the RAM mount with eh swivel so I could theoretically swing it around when I leave the console and see it from the front. I am worried about the stability of it, mounting to the console. I was thinking of putting two boards, top and bottom to help stabilize it more, than the thin piece of console fiberglass. I would be installing it on top of my console where a windshield would go, so it is not the thickest material. What have others done? Also, what bolts should I use? I am surprised it didn't come with any.
I also need to drill a hole to run the transducer and power cable up to the GPS. What is the best way to do that without it looking like junk?
Also, when you disconnect your GPS, do you take it out of the holder or do you disconnect the wiring and take the whole GPS and plastic holder with it? I am worried about disconnecting the GPS from the plastic case and damaging the connector the GS has with the plastic case.

Just wanted to jump in and answer your hole drilling question. They make "hole" drill bits. They are the best way to go. Get one that is slightly bigger than the largest of your plugs you'll need to push through it.
As far as the units. I disconnect the wires and then remove the whole unit and bracket. For my set up, there is one dial screw at the bottom. I unscrew it and lift the whole bracket off then I velcro the cables to the remaining bracket.
Mike nailed the removal of the unit when you're done for the day, also what to use when drilling the holes. If you're unsure of how sturdy it would be use fender washers or a piece of aluminum flat stock between the top and bottom of the console, these will reinforce it.
