Title: Clam dip for the season.

We had a 31/2 lb of chopped clams left from making clam chowder for Christmas eve dinner so I decide time for a bit of dip.
1. can 31/2 lbs chopped clam
2. 3 12 ounce containers sour cream
3. 2 containers of cream cheese
4. zest & juice from  half a large lemon
5. 1 bundle of fresh chive

Drain the clams and reserve the juice, put the sour cream and cream cheese in a large bowl along with the clams, chive after chopping fine and the lemon zest and juice. Salt and spice if you wish. Get out the hand mixer and mix the daylights out of it until it's nice and creamy, I used my moms old mixer, takes 5 or 10 minutes. Get a couple bags of chips or boxes of crackers along with the beverage of your choice and pig out.

That sounds delicious Rodney!! One question, since the ingredients are mixed in the large bowel does that mean that you have to stick the mixer up your ass to combine them?

Sounds awesome.... that's a lot of dip though.

Does it keep in the fridge well? The lemon should help this?

We plan to freeze the rest, if my son and wife leave any. lo

Mike, go with a small can of clams and 1 container of cream cheese or sour cream, cut the amount of lemon juice and zest and chive. I made this amount because we bought 2 31/2 lb cans but only used 1 so I needed to use the other can or throw it out.

Lol!! I made your recipe this morning Rodney but I used smoked salmon instead of clams. The sour cream makes it thinner and more smooth than with just cream cheese and the lemon gives it some real freshness. Real easy to make too.

We like the flavor of the cream cheese, if you reserve the juice from the clams you can add some of it to "loosen" it up, just use a bowl not bowel. lo
