Title: Anyone ever smoked with Cherry?

I've cut down a few large trees I've been told are box cherry, or black cherry.

They are light colored on the outter rings, with a distinct ring, then darker reddish center.

I was going to save some of it to smoke with, a few people wanted some to make stuff, which is fine with me they can take what they want, I've got 3 more of them to cut down... lol...

But has anyone every smoked with it? I'll take some pictures this afternoon of the inside, and the bark and leaves so ya'll can help me identify them.

Cherry makes a fine smoking wood as do many fruit trees. They impart a sweeter, less overpowering smoke than mesquite or hickory or oak or maple. Make sure you remove the bark and that the wood is not too moist. It should dry or cure for a few months. When the wood is at about 30% moisture you are good to go. Buy a moisture meter online. Apple wood is my favorite but cheery chips are easier for me to find down here and use them all the time.

Get rid of the bark you say?

One person told me be sure to leave it on there....

Is there reason to one or the other? Not saying one is right or wrong, just curious as to why there are varying opinions.

No but I have used sugar cane stalks and it gave the meat a sweet taste !!

A heavy bark IMHO tends to flare up and burn hotter..... normally I soak my wood before using,,, like right before I want it to smoke not burn

Yeah I usually soak my hickory first.

The bark will impart a bitter taste.

Remove the bark, soak the wood just before smoking. Quit drooling and settle down and EAT!

mix it with another hotter burning wood, very good for anything pork
