Title: Smoking Turkey

Looks good sir!

I'm going to break out the turkey fryer this afternoon. Never done this before so I better get drunk first right?

I'm on duty today. Kind of glad your not in my district right now! lo

Two quick tips.

1. Make sure your bird is dry. No water on it. Water and oil don't mix. Especially with hot oil!

2. Measure the amount of oil to put in the pot with water first.
Put the bird in and fill with water to the right level (a few inches below the rim). Remove the bird and mark the level where the water is. Pour out the water and fill with oil to the level you marked the water at. Heat the oil, fry that baby up and enjoy your beverage! ~beer~
I've only been on a couple turkey fryer fires but both were caused when the people didn't do this step and the oil spilled over in to the fire when they put the bird in.

Fun for us as long as no one gets hurt! ;D

Looks great! The turkey I mesquite smoked last week is already gone. I'm making smoked turkey soup from the carcass tomorrow. By the way, the mesquite turkey was wonderful and I will make it again. I've never eaten fried turkey so feel free to send a sample--if there is any left.
WHAT KIND OF WOOD DID YOU USE, PRINCETON?

Well, it turned out really good for a first effort. Smoke was a bit heavier than I wanted but everyone who tried it liked it. I used mostly hickory because I already had it and a little apple. We were surprised how moist it turned out. (Basted in salted butter and I kept the water pan filled.

Rock, I've been frying turkeys for a lot of years. I think it's still my favorite! Cojab is spot on! Dry the bird and the fryer after you find the level for you oil. Water makes some amazing hot oil pops once the oil gets up to temp.

This is my first year with this smoker. My favorite so far this year has been my smoked salmon. Ribs and picnic shoulders have also turned out really good. I may take a stab at venison jerky in the coming weeks.
