Title: Trout fillets with sliced almonds in Amaretto sauce

An easy dish to prepare and make. It is also one of my most asked for recipes by my guests. Total time is about 20 minutes. 10 minutes preparation; 10 minutes cooking and serving

Ingredients

4 trout fillets
8 teaspoons of flour
1 cup of slivered or chopped almonds
Amaretto (an Italian sweet liquor) You can also use Benedictine & Brandy
Butter to cook with

Preparation

mix the flour and 1/2 cup of almonds together in a large shallow dish
Put enough Amaretto into another dish
put the fillets into the Amaretto till coated
dredge the coated fillets in the flour/nuts and press gently till coated

Cooking

Heat enough butter in a skillet to cover half the thickness of the fillets. Med/High heat is best
take the remains of the Amaretto you use for coating and pour into the heated butter
place the fillets into skillet: cooking time is 2-3 minutes a side
add the remaining 1/2 cup of nuts into the skillet to toast them.

Serve the fillets with the toasted nuts from the skillet on top. Spoon some of the sauce over the fillet.
